Dessert is my favorite meal of the day! The Crock Pot Slow Cooker is my favorite method for cooking.

Add the two together and you get the CrockPots Mama all time favorite Slow Cooker Rice Pudding.

Slow Cooker Coconut Rice Pudding

Crock Pot Slow Cooker – Recipe Cookbook

Makes 6 Servings

Ingredients:

  • 2 cups water
  • 1 cup uncooked converted long grain rice
  • 1 tbsp unsalted butter
  • 2 1/4 cups evaporated milk
  • 1 can (14 oz.) cream of coconut
  • 1/2 cup raisins
  • 3 egg yolks, beaten
  • 1 tsp vanilla
  • Pinch of salt
  • Grated peel of 2 limes
  • Toasted shredded coconut (optional)

Directions: 1. Spray crock pot slow cooker with non stick cooking spray. Place water, rice, butter and salt in a medium saucepan. Bring to a boil over high heat, stirring frequently. Reduce heat to low, cover and cook 10-12 minutes. Remove from heat and let stand covered 5 minutes. 2. Add evaporated milk, cream of coconut, raisins, egg yolks, lime peel and vanilla and mix well. Add rice, stir until blended and pour into the prepared crock pot slow cooker. 3. Cover, cook on low 4 hours or on high 2 hours. Stir every 30 minutes if possible. Pudding will thicken as it cools. garnish with toasted shredded coconut if desired.

The first time I tried Risi Bisi I was hooked.

It is a traditional venetian dish of rice and fresh peas cooked in chicken broth for a flavor and fluffy texture like no other I have tasted.

This is without a doubt my favorite rice and peas recipe to prepare and guess what guys I make it in the crock pot slow cooker.

Yep, slow cooker rice as a side dish to dinner that easy and inexpensive.

I prefer fresh peas but considering the time of year and price of produce I often use just a good old bag of peas from the freezer.

Risi Bisi – (Rice and Peas)

Crock Pot Slow Cooker – Recipe Book

Serves 6

Ingredients:

  • 1 1/2 cups uncooked long-grain rice
  • 3/4 cup chopped onion
  • 2 cloves garlic, minced
  • 2 cans (14 1/2 oz each) chicken broth
  • 1/3 cup water
  • 3/4 tsp. Italian seasoning
  • 1/2 tsp. dried basil
  • 1/2 cup frozen peas
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup toasted pine nuts (optional)

Directions:

1. Combine rice, onion and garlic in the crock pot slow cooker.

2. Bring broth and water to a boil in small saucepan. Stir broth mixture, Italian seasoning and basil into rice mixture.

3. Cover and cook on low 2 to 3 hours or until liquid is absorbed.

4.  Add peas. Cover and cook on low 1 hour. Stir in cheese. Sprinkle with pine nuts if desired.

This a great side dish to complete beef, chicken, pork and fish.

Are you missing the warm turkey, delicious stuffing  and pumpkin pie we all love at Thanksgiving.

Here is a Crockpots Recipe for Turkey Breast With Barley-Cranberry Stuffing that will fill the void until  Thanksgiving comes around.

If you looking for just a crock pot stuffing recipe side dish then this is it.

This is a great recipe for side dishes with baked chicken or BBQ ribs.

It’s so simple to alter, just leave the turkey out of the recipe – that’s it.

Turkey Breast And Stuffing Recipe

Prep Time: 5 minutes -
Cook Time: 4-6 hours low

Ingredients:

  • 2 cups chicken broth
  • 1 cup uncooked quick-cooking barley
  • 1/2 cup chopped onion
  • 1/2 cup dried cranberries
  • 2 tbsp. slivered almonds, toasted*
  • 1/2 tsp. sage
  • 1/2 tsp garlic-pepper seasoning
  • 1/3 cup finely chopped fresh parsley
  • 1 fresh/thawed bone-in turkey breast (about 2 lbs.), skinned

TIP: *To toast almonds, spread in a single layer on a cooking sheet and bake at 350 degrees for 10 minutes or until golden brown.

Directions:

  1. Combine broth,barley,onion,cranberries,almonds,sage and garlic-pepper seasoning in Crock Pot.
  2. Coat a large nonstick skillet with cooking spray and brown turkey** breast on all sides over medium heat.
  3. Add Browned turkey breast to Crock Pot.
  4. Cover and cook on low for 4-6 hours.

TIP: **Browning poultry before cooking in the Crock Pot isn’t necessary but helps enhance the flavor and adds an oven roasted appearance to the finished dish.

Meal Assembly:

  1. Transfer turkey to cutting board and cover with foil to keep warm.
  2. Stir fresh parsley into stuffing in the Crock Pot.
  3. Slice Turkey and serve with stuffing.

Serves 6. Include some warm homemade dinner rolls for a complete Crock Pot Meal that was simple to prepare and delicious to eat.

SIDE DISHES: You can prepare as a crock pot stuffing recipe for side dishes with ease. Just omit the turkey breast from the original recipe and prepare as directed.
