Risi Bisi – Slow Cooker Rice And Peas

The first time I tried Risi Bisi I was hooked.

It is a traditional venetian dish of rice and fresh peas cooked in chicken broth for a flavor and fluffy texture like no other I have tasted.

This is without a doubt my favorite rice and peas recipe to prepare and guess what guys I make it in the crock pot slow cooker.

Yep, slow cooker rice as a side dish to dinner that easy and inexpensive.

I prefer fresh peas but considering the time of year and price of produce I often use just a good old bag of peas from the freezer.

Risi Bisi – (Rice and Peas)

Crock Pot Slow Cooker – Recipe Book

Serves 6

Ingredients:

  • 1 1/2 cups uncooked long-grain rice
  • 3/4 cup chopped onion
  • 2 cloves garlic, minced
  • 2 cans (14 1/2 oz each) chicken broth
  • 1/3 cup water
  • 3/4 tsp. Italian seasoning
  • 1/2 tsp. dried basil
  • 1/2 cup frozen peas
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup toasted pine nuts (optional)

Directions:

1. Combine rice, onion and garlic in the crock pot slow cooker.

2. Bring broth and water to a boil in small saucepan. Stir broth mixture, Italian seasoning and basil into rice mixture.

3. Cover and cook on low 2 to 3 hours or until liquid is absorbed.

4.  Add peas. Cover and cook on low 1 hour. Stir in cheese. Sprinkle with pine nuts if desired.

This a great side dish to complete beef, chicken, pork and fish.
